KINGSTON, JAMAICA – July 20, 2017 – With summer in full swing, it’s time to spice up summer barbecue recipes with Jamaican jerk seasoning, turning up the heat on the usual backyard party. Jamaican burger, ribs and chicken recipes are perfect for summer revelers looking for something new this Labor Day. Consider these Jamaican recipes to add new and bold flavors to your BBQ this year:

Jerk Aioli Burger

Ingredients

·         2 lbs. ground beef (80/20 lean/fat)

·         ½ cup diced onions

·         ¾ cup dried bread crumbs

·         3 tbsp. Grace Jerk Seasoning

·         ¼ cup Grace Jerk Marinade

·         1 egg beaten

·         Hamburger buns

Jerk Cilantro Aioli Spread

·         1 cup Mayonnaise

·         5 tbsp. finely chopped cilantro

·         2 tbsp. Grace Sweet and Spicy Hot Pepper Sauce

·         1 tsp. garlic powder

·         1 cup diced Pineapples

·         1 tsp. Grace Jerk Seasoning

·         1.3 cup red onions, finely chopped

Directions

1.    Burger – Combine all ingredients into a bowl and mix together thoroughly. Using an ice cream scoop (4 oz.), scoop the mixture up to create even portions. Gently press the balls down with your palm to flatten the meat into a burger patty.

2.    Pre-heat your grill to 350° F. Place the burgers on the grill and allow to cook to your desired temperature.

3.    Jerk Cilantro Aioli Spread – Combine ingredients. Stir until combination has a smooth consistency while maintaining the chunks of pineapple.

To serve: Place burger on the bun and garnish with Jerk Cilantro Aioli Spread. 

Jerk Smokey BBQ Ribs

Ingredients

·         2 full racks of pork ribs – trimmed and cut in half

·         4 oz. Busha Browne’s Jerk Seasoning

·         6 oz. Busha Browne’s Jerk Smokey BBQ Sauce

·         2 tbsp. olive oil

Directions

1.    Rub pork ribs with jerk seasoning and allow to marinate – 1 hour, preferably overnight.

2.    When ready to start cooking, rub ribs with olive oil and wrap with aluminum foil – seal completely. On your grill, place ribs over indirect heat for 1 hour.

3.    After the hour, remove ribs from foil and baste with Jerk Smokey BBQ Sauce and cook for additional 15 mins over direct heat – turn and baste often.

4.    In your oven, cook for 1 hour at 325° – remove from foil and baste with BBQ sauce and turn heat up to 375° for additional 15 mins. – turn and baste repeatedly.

Jerk BBQ Chicken Tacos

Ingredients

·         1 large red onion, cut into thin slices

·         2.5-3 pounds of boneless chicken breast

·         Grace Jerk BBQ sauce

·         8 – 10 corn or flour tortillas

Salsa

·         1 tbsp. vegetable oil

·         Salt and freshly ground pepper

·         32 oz. frozen corn kernels (thawed)

·         2 Roma tomatoes fine diced

·         1 can black beans (15 oz.), drained and rinsed

·         ¼ medium red onion, fine diced

·         1 diced jalapeno, seeds removed

·         2 tbsp. chopped cilantro leaves

·         2 tbsp. diced scotch bonnet pepper (optional)

·         2 tbsp. lime juice

Directions

5.    Heat the grill to medium-high.

6.    Season chicken breast with Jerk seasonings and grill for 8-10 minutes on each side

7.    When cooked, remove chicken and thinly slice.

8.    In a large bowl, combine tomatoes, beans, onion, jalapeno, cilantro, lime juice, canola oil and corn for salsa. Season with salt and pepper and mix well.

To serve: Place salsa on soft tacos and top with grilled jerk chicken and Jerk BBQ sauce.
