Portofino offers intimate al fresco dining for guests overlooking azure waters, reminiscent of a charming Italian coastal village evoking nostalgia and romance, but in a distinctively sultry Caribbean setting. Highlighting a fresh take on Italian classics, example menu items include Carpaccio di Manzo, thinly sliced raw beef tenderloin with parmesan, arugula in a lemon vinaigrette to start, and as a main, Tagliatelle Frutti di Mare with scallops, calamari, shrimp and black mussels cooked in white wine and Napolitano sauce, immersing guests in la Cucina Italiana. Portofino is open for dinner only with an à la carte, five-course menu on select evenings throughout the week.

Azul Restaurant has become known for its sleek, signature architectural stature perched at the edge of a cliff overlooking Maho Bay featuring muted whitewashed interiors offset by pops of cerulean blue. The captivating atmosphere reflects the Mediterranean-inspired menu offering a range of tastes and dietary options from gluten-free and vegan like the Roasted, Honey Orange Glaze Duck Leg with red cabbage in a red wine reduction and Vegetable Paella cooked in Saffron, all made with seasonal ingredients and fresh vegetables. Azul Restaurant is open for breakfast every morning and offers daily changing menus for lunch and dinner.

Bluefin Restaurant + Bar is located above Azul Restaurant boasting the best front-row views of the Caribbean Sea, neighboring islands, and Sint Maarten’s famed golden hour. This convivial venue serves a variety of casual light bites in the afternoon like hummus and pita, BBQ chicken wings and nachos complemented with a list of refreshing libations. For dinner, the venue embraces a healthy, poke-inspired culinary concept. Guests can start with Chili Shrimp Ragout Spring Rolls then choose from a variety of poke bowls like the specialty Crispy Chicken with Avocado Aoili, Soy Tuna or Teriyaki Salmon bowls, and build your own with a variety of proteins, toppings and bases including cauliflower rice or quinoa, all using sustainably sourced fish and fresh ingredients. Bluefin Restaurant + Bar is open for light bites and dinner on select nights.
